
Minni di virgini are small domes of golden shortcrust pastry, shaped like a little cupola and topped with a candied cherry. Inside they hold a soft, fragrant filling of sheep’s milk ricotta, enriched with candied fruit, chocolate chips, and zuccata (candied pumpkin). The contrast between the crumbly pastry and the creamy center creates a rich, aromatic dessert. They are most often enjoyed at the end of a meal or in local pastry shops as a refined sweet break.
This dessert is one of the most distinctive symbols of the Agrigento area, particularly of Sambuca di Sicilia. It reflects the convent tradition and the creativity of the nuns who transformed simple ingredients into elaborate and symbolic sweets. Even today it represents a source of local gastronomic pride and a living memory of religious celebrations and Sicilian culture.
Minni di virgini were created in the 18th century in the monastery of the Badia di Santa Caterina in Sambuca di Sicilia. They were devised by the nuns for the feast of the Madonna dell’Udienza, creating a sweet with a symbolic shape and a rich filling of ricotta and candied fruit. Over time the recipe left the convent walls and became a specialty of local pastry shops.
